Parish Council Meeting Minutes (16JAN18) Attendees: Father Mark, Betsy Adams, John Bielinski, John Kohlhaas, Sue Loeffler, Riyan Mendonsa, Lynn Norby, Jan Parsons, Bob Schlitz

Anniversary Celebration Polynesian/tropical theme; planning for 150-175
Menu: pork shoulder from Swanson’s; Hawaiian buns (dollar bun size) from Sam’s Club; coleslaw; rice. Bread consumption down so plan accordingly. Serving/cost estimates per Father Mark and John Bielinski:
50 pounds of pork totaling $160
400 buns totaling $60
12 pounds rice serves approximately 200 people (1/2 cup serving); may add pineapple/green peppers/vegetable stock as a boost
Coleslaw approximately .50 per serving (1/2 cup)
Pistachio marshmallow salad with pineapple (kids may prefer to cole slaw); needs three hours to chill/set
Desert trays with bars; Father Mark’s mom to make almond joy bars; Betsy Adams, John Kohllaas, and Lynn Nordby (cheesecake bars) will each do a pan or two
Chocolate fountain (Father Mark and Lynn Nordby both own) cost effective and “fun” element; bananas, marshmallows, Rice Krispy bars (Jan Parsons to provide RK bars; bananas and marshmallows will be part of overall grocery order)
Polynesian punch, decaf coffee, water
John and Sue Bielinski to cook pork Friday afternoon/evening; best to also make pistachio salad and coleslaw that evening too; Jan Parsons to do décor Friday evening or Saturday morning depending on space availability; that leaves rice only for prep on Saturday; plus cut bars and prep beverage stations
Nicole to order biodegradable plates, cups; napkins en masse for this and future events; enough silverware on hand to use
Sue Loeffler design draft for placements done; St. Richard’s related crossword puzzle included
Lynn Nordby to produce signage; centered on “friend-raiser”; free will offering; include menu so people know in advance; will be displayed in the Narthex two weeks out
No children’s games; event is too short in duration to plan any elaborate/involved games
Parish Updates Capital Campaign/Social Hall meeting held; need to do in three tier approach; with abatement, we only have enough money for basics; need to focus on foundation before moving forward with décor elements, etc. Campaign needs to be finished before all plans can be finalized. (Parking lot also needs to be prioritized.)
Parish directory discussions ongoing led by John Bielinski and Riyan Mendonsa; appears to be “do-able”; LifeTouch eager to work with us; next steps to talk with Cindy Nedved regarding calendar of events. Considering mid-April or mid-May prior to summer break; in light of LifeTouch’s workload, best to avoid fall dates.
